BU NE YEMEK started as a sauce producer; within two years, Turkey's best restaurants had it on their menus. What we sell isn't the sauce in a bottle — it's the depth of knowledge behind it. pH < 4.6, salt and temperature thresholds, botulism and mould risk — we always stay on the safe side. Every recipe we teach is built on a real safety floor, not folklore.

We start at sterilization and food-safety protocol, then walk through koji's five growth conditions, the microorganisms and enzymes doing the work, growth rate and haze patterns, different koji strains, substrates and aroma profiles, and harvest.
